Ingredients

For the Arepas:

2 cups pre-cooked white or yellow cornmeal (such as P.A.N.)

2 ½ cups warm water

1 teaspoon salt

1 tablespoon vegetable oil or melted butter (optional)

Optional Fillings:

Cheese-queso fresco, mozzarella, or cheddar

Shredded chicken or beef

Black beans and avocado

Scrambled eggs

Instructions

Make the Dough:

Combine in a large bowl the warm water and salt. Dissolve.

Gradually add the cornmeal with your hands or a spoon until a smooth elastic dough is achieved. Let it rest for 5 minutes. Shaping the Arepas:

Divide the dough into 6 to 8 equal portions.

Roll each portion into a ball then flatten it into a round patty about ½ inch thick.

Cook the Arepas:

Heat a skillet or griddle over medium heat and grease lightly with oil or butter.

Cook the arepas for 4-5 minutes per side, or until a golden crust forms. For Fluffiness-Bake (optional):

Place your oven at 350°F (175°C).

Transfer the cooked arepas to a baking sheet and bake for 10 minutes to help them puff and cook through.

Split and Fill:

Once cool enough to handle, slice the arepas open horizontally to create a pocket. Fill with your favorite ingredients.

Tips for Perfect Arepas:

If it's too dry, add a tablespoon of water at a time until it comes together. If it's too sticky, sprinkle in a little more cornmeal.

Mix cheese or herbs directly into the dough for extra flavor before shaping.

Use a non-stick skillet or griddle to prevent sticking.
