Ingredients:

For the dough:
2 cups (228g) masa harina, white or yellow
1 teaspoon chicken bouillon granules, optional
1/2 teaspoon salt
1 1/2 to 2 cups boiling water
2 tablespoons (28g) butter or lard, softened
Vegetable oil, for cooking
For the filling:
1 cup shredded mozzarella cheese or Oaxaca cheese
1 cup refried beans, optional

Directions:

1. Prepare the dough:

• In a large bowl, combine the masa harina, chicken bouillon granules (if using), and salt.
• Gradually add the boiling water, starting with 1 1/2 cups, and mix with a spoon until the dough comes together. Add more water if needed to achieve a smooth, pliable dough.
• Add the softened butter or lard and knead the dough with your hands until well incorporated and smooth. Cover the dough with a damp cloth and let it rest for 10 minutes.

2. Prepare the filling:

• In separate bowls, have the shredded cheese and refried beans ready for filling the pupusas.

3. Shape the pupusas:

• Divide the dough into 8 equal portions and roll them into balls.
• Flatten each ball into a disk about 4 inches in diameter.
• Place a tablespoon of cheese in the center of each disk, adding a tablespoon of refried beans if desired.
• Fold the edges of the dough over the filling and shape it back into a ball, ensuring the filling is sealed inside.
• Gently flatten the filled ball into a disk about 1/2 inch thick.

4. Cook the pupusas:

• Heat a lightly oiled skillet or griddle over medium-high heat.
• Cook the pupusas for about 3-4 minutes on each side, or until golden brown and slightly crispy. Add more oil as needed.

5. Serve and enjoy:

• Serve the pupusas warm with curtido (pickled cabbage) and salsa roja for a traditional Salvadoran experience. Enjoy your homemade pupusas!
