Ingredients:

4 cod fillets

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon fresh ginger, grated

1 garlic clove, minced

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sesame seeds (optional, for garnish)

Directions:

Preheat oven to 400°F (200°C).

In a small bowl, whisk together soy sauce, honey, grated ginger, garlic, rice vinegar, sesame oil, olive oil, salt, and pepper to create the ginger soy glaze.

Place cod fillets on a baking sheet lined with parchment paper. Brush the fillets with the ginger soy glaze, coating them evenly.

Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.

Remove from the oven and garnish with fresh cilantro and sesame seeds if desired.
